A Chicken Taco Salad

Wow, so many of you thought my Cottage Cheese Pumpkin Oats sounded delicious! Boy were they, I hope you all enjoy them as much as I did. Let me warn you, make sure your hungry because this bowl of oats is pretty huge and pretty filling :mrgreen:.

I finished my chai tea latte from last night around 10am.

Except this time it was an Iced version from sitting in the fridge all night.

For lunch I was planning on something Out of this World but my brother hasn’t come home yet and I was hungry. My super cool lunch plan was something I needed an assistant chef to say the least, so I regrouped and pushed my plan to dinner. So keep a look out.

I made a simple salad with mixed romaine and ice berg lettuce.

I made this salad with some shredded cheddar and jack cheese, left over chicken breast, some tortilla chips (crumbled) and some really saucy salsa mixed with some lite ranch dressing.

I added a pita for some filling factor. I knew the salad, even with the cheese and chicken would leave me really hungry this afternoon. The pita was from TJ’s and was pretty tasty.

I would have added some fresh veggies but we’re out of produce, boo.

This afternoon I’m doing some college planning. School starts on Sept. 23rd and I have to work out disability assistance to get me from class to class, petition into a class because my transfer status screwed up a couple things. Santa Cruz is ran by Hippies which makes things somewhat difficult at times when dealing with deadlines, holds, other organized paperwork type things. Anyways, it should be an interesting afternoon.

Good for you, going to SC!
That is a great school and totally beautiful! I hear it is pretty hilly, so it’s good there is some sort of help for you.
How much longer are you on crutches?

September 23rd? Lucky girl! I’m in the throws of school right now and I’m completely exhausted. I can’t wait until Thanksgiving break (which is a long ways off!)
