Almond Joy Baked Doughnuts

Wow! I just got home from the gym and I really kicked my own bootay.

I ran 1 mile to keep my Run Streak going then I jumped on the elliptical for 60 minutes at level 16. He knows who his master is now!!

While on the treadmill I needed a little extra motivation to do the last 10 minutes so I decided if I did them I could have a beer when I got home… I guess you all know what I decided. :mrgreen:

I had a heaping salad. It’s the Garden Veggie Taylor Farms bagged salad. I put the included sunflower seeds and bacon on top but skipped the dressing for my own balsamic vinaigrette. I topped it with a turkey burger rubbed in cracked black pepper and cooked in evoo.

It was like turkey bacon burger in a bowl. ;-)

Now, I know you’ve been eyeing that suspicious little ring of chocolaty delight in the corner…

In honor of National Doughnut Day I came home from work and whipped up some doughnuts.

Almond Joy {Gluten-Free} Baked Doughnuts!

Last night Max and I did a quick grocery store stop and I bought a bag of coconut flour. Total impulse. But when I saw on twitter that today was National Doughnut Day, I instantly knew exactly what to make.

I looked at a bunch of coconut baked doughnut recipes, but ended up basing my recipe on this one.

Almond Joy Baked Doughnuts

Ingredients
1/2 cup coconut flour
1/4 tsp salt
1/4 tsp baking soda
6 eggs
1/4 cup honey
1/4 cup stevia, I used truvia
1 tsp vanilla extract
1 tsp almond extract
1/2 cup butter, I used margarine that was dairy free
(for the toppings:)
1 cup dark chocolate chips
1/4 cup chopped almonds
1/4 cup coconut shavings
2 TBSP butter or butter substitute
2 TBSP almond milk
Instructions
Pre heat oven to 350 degrees. Combine coconut flour, salt, baking soda and stevia into a mixing bow. In a separate bowl whisk eggs until all yolks are broken and incorporated into the whites. Mix in honey, butter, vanilla and almond extracts.
Combine wet and dry mixtures using an electric mixer. Once thoroughly combined, no clumps, pour dough into a greased doughnut pan.
Cook for 15-18 minutes, or until a toothpick comes out clean.
While the doughnuts bake, in a double boiler heat dark chocolate chips, butter, and almond milk over steaming water. Mix constantly over medium low heat until completely melted and combined.
Dip baked doughnuts into chocolate mixture, I did it when they were still warm, and sprinkle almonds and coconut shavings over the top.

I was so worried about using 6 whole eggs, but trust me it works!

These doughnuts are gluten free, soy free, and dairy free (if you use dairy free margarine). And because they use coconut flour they’re high in fiber!!!

These midnight treats definitely pack a nutritious punch.

These doughnuts taste exactly like Almond Joy chocolate bars!!! Don’t leave them unattended in the kitchen… they have a tendency to disappear.

What would you change to make these tree nut free?

Well… if we want to get technical these are more like an Almond Joy Mounds bar because of the almonds. If you replaced the tsp of almond extract with another tsp of vanilla extract, used a little real milk in the chocolate sauce instead of almond milk, and topped the doughnuts with dark chocolate sprinkles and coconut shavings then they’d be nut free and like an original Almond Joy bar. :mrgreen:

I’m not up on nut allergies, so I don’t know if you are allergic to nuts if you can eat coconut or not… if not this recipe is delicious and definitely nut free!

If you need to borrow a doughnut pan, let me know.

Whoa….look at you go, those look fantastic! I love coconut flour…isn’t it grand? You can do so much with it. I’m not normally a doughnut person, but I’d make an exception for these!

I don’t really like doughnuts either… but these are delish!!!! I can’t walk through the kitchen right now because I’ve already had 2 and they call to me.

Those look really tasty and they are baked so thats way better than a normal donut!

Awesome job on the run streak! I ran a mile yesterday too just to keep it going. Seems like such a short run but whatever.. it counts!

I know! Most of my streak runs have been little 1 milers. they are really helping me appreciate short runs.

Just fyi: An estimated 1.8 million Americans have an allergy to tree nuts. Allergic reactions to tree nuts are among the leading causes of fatal and near-fatal reactions to foods. Tree nuts include, but are not limited to, walnut, almond, hazelnut, cashew, pistachio, and Brazil nuts. These are not to be confused or grouped together with peanut, which is a legume, or seeds, such as sunflower or sesame. Coconut, the seed of a drupaceous fruit, has typically not been restricted in the diets of people with tree nut allergy. However, in October of 2006, the FDA began identifying coconut as a tree nut. The available medical literature contains documentation of a small number of allergic reactions to coconut; most occurred in people who were not allergic to other tree nuts. I am not one of those few. Luckily I can have seeds (including coconut) and legumes.

OH MY GOODNESS!!! I have been thinking about your doughnuts since I saw the pictures on Instagram last night! AND they are gluten & soy free…I can eat the whole pan, right?!?!

YES you definitely can. They’re tiny and plus they have a hole so most of the calories fell out during baking.
