In my opinion, anything can be adapted by adding chocolate chips. It’s a quick upgrade to any bread, muffin, or… cake.
I skipped snack this morning so I was in need of more “fuel” around 2pm. I found this cake in the Vegetarian Times Cookbook and I had to make it. But instead of cake… cupcake inspired muffins. I love the flavor of Extra Virgin Olive Oil so I was really intrigued at how they would taste. The chocolate chips where a last minute throw in

Mini Extra Virgin Olive Oil Muffins with Chocolate Chips
adapted from the Vegetarian Times Cookbook
Ingredients
- 4 eggs
- 1/2 cup evoo
- 1/2 tsp baking powder
- pinch salt
- 1 cup flour
- 1/2 cup chocolate chips
Directions
Beat together eggs and sugar. Once combined beat in evoo, baking powder, and salt. Fold in Chocolate chips then the flour.
Pour into 32-40 well greased mini muffin tins.
Bake at 350 degrees for 15-20 minutes.
FYI each mini muffin is 75 calories with chocolate chips! Enjoy this snack attack!

First snack at 2pm was 3 of the EVOO Chocolate Chip Mini Muffins. The crunchy outside makes these muffins a perfect snack!
Totaling 215 calories! Leaves a little cushion for the batter I might have licked off the spatula. Oh- and it’s pretty much rule you have to eat the chocolate chips that spill out onto the countertop when pouring into the measuring cup. Right?
Then I munched on a few cutie oranges.
60 calories. Snack well spent.
