Banana Bread Protein Pancakes

Happy New Week! Well, technically it’s Tuesday but yesterday was Martin Luther King Day and I had it off so it feels like today is the start of the week.

I did a lot of stuff this weekend. If you missed my posts here are some links to get caught up.

I made some killer healthy pancakes this morning!

Banana Bread Protein Pancakes

Prep Time: 10 minutes

Cook Time: 5 minutes

Keywords: fry breakfast dairy-free gluten-free banana

Ingredients (2 large pancakes)

  • 1/4 cup gluten free all-purpose flour
  • 1 tsp gluten free baking powder
  • 2 tsp cinnamon/sugar mixture or 1 tsp of each
  • 1 ripe banana (the more ripe the better)
  • 2 egg whites
  • 1 tsp vanilla extract

Instructions

Combine all ingredients in a bowl.

Mash together until batter becomes smooth. Go with your own taste on how smooth you’d like your banana. Chunks vs. Smooth…. it’s a tough call.

Pour batter onto a preheated griddle. I made 2 large pancakes but minis would be fun too.

Heat until partially cooked and flip. Once golden brown put on a plate and enjoy.

I topped mine with peanut butter for some added protein. I figured if I was going there why not go all the way?! These pancakes are pretty hearty. Definitely eat ‘em on an empty stomach!

Weekly Workout Plan!

Here’s what’s on my plan for this week.

  • Monday: Stretch and Strengthen
  • Tuesday: 3.5 mile run
  • Wednesday: 2 mile run or cross training
  • Thursday: 3.5 mile run and strengthen
  • Friday: REST
  • Saturday: 40 minutes cross training
  • Sunday: 5 miles :shock:

I skipped yesterday’s strengthen so I’ll have to put it in after one of my runs this week. Probably tomorrow after my easy 2 miles. I’m not gonna lie, I’ve never ran 5 miles all at once and it seems so scary!! When I played college basketball my coach had us run 5 miles every day during the summer to stay conditioned but I had a mental block about 5 miles so I did 3 in the morning and 2-3 at night every day. I don’t know, it’s got me kinda wigged out…

Last Week’s Workout Recap!

I have worked out next to a ripped guy before! It was a little intimidating at first, but then I worked up enough courage to ask him some questions. He was really nice about it and explained the correct form. Let’s just say he was magazine hot. ;) I think because I knew I didn’t have a chance at all with him helped a bit too. :)

I have worn my pj’s to black Friday, but I think that is it…

Total props for your mileage – you already basically ran your first half marathon… =)

I want the time to make these pancake! They sound/look delicious!

My new excuse for wearing pj-like clothing out in public is that I’m “training” – my new not-at-work default outfit is yoga pants, uggs, and a lulu top (with a super warm jacket on top). Yeah. I’m officially THAT person now. It’s because I’m a runner though. I promise.

Those pancakes look seriously yummy, and I like that the protein is from real food not protein powder! I find to-do lists motivating, and I workout at a women’s only gym soi avoid the whole Hulk Hogan phenomenon.

Me too. I’m so against protein powders and stuff. Protein is in real food, you don’t need expensive powders.

i feel like ive been seeing pancakes all over blogs this week, might need to make em this weekend!

the thing that helps me get over mental blocks through runs is not to think about the mileage overall..i break into sections in my head. So dont psych yourself out and think oh my gosh..5 miles. think, ok, gonna go out 3 miles..then once you hit 3 miles, only 2 miles left to go on the last half. you can do it!!

i’m a jets fan but rooting for the 49ers this week bc i hate the giants :)

I know! They are everywhere. That’s where I got my inspiration from. That is really good advice. I’m definitely going to try it on Sunday when I have my 5 miler. I’m also making Max run with me because I won’t be a pansy if I’m running with someone.
