Breakfasts Explained

I think breakfast is my favorite meal. In fact I’m sort of obsessed with it.

2 egg sandwiches on fresh biscuits with plum jam and 2 mugs of coffee with milk and agave nectar.

Growing up I didn’t like breakfast. I was forced to eat cereals and toast variations before running out the door for school. So when I went to college breakfast was in the list of ‘things to go that my parent’s made me do!’ Everyone has that list for when they finally get on their own. Mine consisted of not calling every night, going to parties, procrastinating homework assigned readings and ditching breakfast for good.

So this morning when I had the I Heart Breakfast Epiphany, I started thinking when did I begin to love breakfast?. When I started getting healthy again I set a goal to eat breakfast for 30 days straight. I knew breakfast was the key to starting a good day and I wanted that.

30 days of breakfasts teaches and reminds one of a lot of recipes. Pancakes, French Toasts, Waffles, Eggs and all their variants. I think somewhere around day 20, when I’d made it past the excitement of starting something new and the frustration of getting past the excitement and into the real life, with extra 30 minutes I needed every morning, I fell in love with the simple tastes of the first meal.

I think the biggest thing about breakfast that I love is the quick breads. I love sweet loaves and coffee cakes. Pancakes and waffles, easy biscuits. Mornings are cold. Bread makes me feel warm.

Has anyone ever noticed that breakfasts make coffee taste better? Pancakes make coffee taste amazing! And when I have sweeter meals I don’t even sweeten my coffee, just sip it after a bite of breakfast.

On the other hand… I do not enjoy lunch. Lunch is usually my throw away meal. I can skip lunch and the strange combinations of things I throw together to make a meal. Usually, random things  I find in the pantry or fridge come together to make something filling. But I never enjoy it like I enjoy breakfast.

Do you know that your breakfasts have inspired me to eat big, satisfying morning meals? It has helped me feel so much better, and I don’t think I’ve told you that it was your blog that got me going in the right direction. So thank you, my sweet friend. I love breakfast foods, but my problem is I’m never hungry first thing in the morning. I start getting hungry around maybe 11am, but lunch doesn’t enthuse me either. I do look forward to my morning coffee though–it’s one of my favorite moments of the day.
Now dinner–I love dinner. There’s a meal I always get behind. =)

Jenna- that was my problem too! I wasn’t hungry in the morning and the food didn’t appeal to me. Once I started making myself eat breakfast I began to ‘need’ it. I can’t not eat breakfast now. I’m ravishing by 10:30 if I try to skip. I, like you, love dinners too! I love preparing epic meals.

Hey, I’m in Monterey! I should have thought ahead and seen if you could meet up for lunch. I’m gonna run into a pub at the wharf for some eats… Hopefullysomething warm, it’s nasty out!

I actually bought a bag of those frozen pre-made biscuits, I’m going to have to make a breakfast sandwich soon!

Ohhh, those eggs looks so delicious! That’s probably the one animal food that I really miss since becoming vegan. I’ve always loved breakfast, I think it’s partly because I’m happy to eat since I usually eat dinner pretty early and don’t snack afterwards and partly because I have a sweet tooth and usually have some kind of fruit.
