I was a little- creative with dinner tonight. I had some leftover garlic shrimp in the fridge and a box of Near East Mediterranean Curried Couscous in the pantry so I whipped up a little concoction.
Simply make the couscous, which was pretty good for boxed food, add a cup to some stir fried veggies and sprinkle left over shrimp on top. Voila.
Simple and Easy.
I was ravenous at 5:45 but that’s just too early for dinner. So I postponed cooking until 6:15 by taking a shower. I guess next time I make a green monster I need to make it a little more filling.
I start school tomorrow. Grr… Not too excited. I was an upper division transfer student when I started school at UC Santa Cruz so I don’t have all the pre-recs to take upper division classes. But I can take them because of my transfer status. The computer can’t let me enroll in the classes I don’t have the pre recs for so I have to crash on the first day. So stressful. I’m not enrolled in any classes yet.
I have to get into History of Art and Visual Culture 80 tomorrow. It’s a required course and if I can’t get into it this quarter I’ll have to wait to take it next winter and it will postpone my graduation. I really hope I get into it tomorrow. That class is notorious for being really impacted. eek.
After dinner I ate a super ripe tangelo for dessert. They’re so sweet. I evaded eating sweets today. Score!
I’m spending the evening trying to map out all the classes I can crash incase some are full, even to graduating seniors.
