Boy, today is flying by. It feels like I just woke up, but it’s already 2:30pm. Are you guys all enjoying your weekends?
Today I woke up at 7am, my usual wake up time. Why can’t I sleep in on the weekend? Anyways, I had a long run on the schedule for today and I didn’t feel like doing it. So I got up, put on my running shoes and went for that run! I gotta keep up that streak.
I knew if I waited I’d never do it…
Here’s some big news! I’m training for the SunRiver Half Marathon! It’s official now, I’ve said it out loud.
I was really hesitant to be officially “in training” because I’ve been officially in training for half marathons 3 other times and none of them have actually ended with me running a half marathon. Maybe 3rd times the charm?! :mrgreen:
My intestines and stomach symptoms are definitely heightened by lots of running so I can’t do a traditional novice training plan and make it to race day… so I made my own plan. :shock:
Here’s what I’m doing.
- I’m running everything very (very) slow… 11:30 min miles
- I run between 30-50 minutes on the treadmill every Tuesday
- I do my usual elliptical workout and kickboxing workouts on the other days
- Then I do a long run Saturdays.
My plan is to increase my long runs by 1 mile every two weeks. I know it’s early, but so far my plan has been working.
I’m not running this one for speed… the goal is to finish, and even walk if I need to.
Why this marathon? Because my family vacations in SunRiver most summers and we’re planning on getting there the weekend of the 1st this year. How perfect is that??? What a fun way to kick off vacation!

I planned my 4 miles this morning to end right at my Dad’s office’s doorway because we always have a family breakfast Saturday morning. He made me wait for almost 30 minutes to get breakfast. Life was tense, I was very-very grumpy!
Finally! I got to choose where we ate because I was turning into scary-hungry Maren, so I chose Dudley’s Diner.
I had 2 cups of black coffee and ordered the 2 x 2 x 2 breakfast.
They didn’t really follow the 2 x 2 x 2… The plate is supposed to be 2 eggs, 2 strips of bacon, and 2 slices of toast with country potatoes. Looks like I scored, huh!
I put spicy salsa on everything.
I ate the ENTIRE thing!!! Including both slices of toast (which I ordered butter free… a little healthy swap :mrgreen:).
I guess my 60 minute elliptical workout last night combined with my 4 miles this morning was enough to make for one ravishingly hungry beast!!!
eggs: 200 cal | potatoes: 400 cal | bacon: 100 cal | toast: 400 cal Total: 1100 calories
After breakfast Mom and I ran a few errands. We both wanted to walk around to help digest our big breakfasts.
By the time we got home it was 2pm and time for a lite lunch. I snacked on a fuji apple while cooking.
I made Kale Chips and Roasted Pepper and Tomato soup.
On a side note, I bought this cute plate this morning… I had to use it.
These were super easy to make. I just:
- washed half a bunch of kale
- heated the oven to 400 degrees and lined a baking sheet with foil
- I drizzled 2 TBSP evoo over the foil and ripped the kale leaves into pieces laying them over the foil and evoo.
- I tossed the kale around the pan to get it equally covered in evoo
- sprinkled the kale with salt, garlic powder and pepper.
- baked for 15 minutes
This whole meal was between 400-500 calories!! 2-300 for the soup and 200 for the evoo on the kale. TASTY!
