KEEPIN’ LUNCH EASY PEASY

It’s been one of those days. Those days where things are just a little bit harder and more difficult than they should be.

When I lost all my files luckily I only had 1 project that I had to make over completely from scratch. I’d already sent her the finished product but it needed a quick resize. That took most of the day. Recreating exactly takes so much more time than creating something new.

That combined with the rest of things being a little bit frustrating today left me needing a major break at lunch so I threw together something quick and easy… and uber nutritious.

I had this chopped veggie salad that’s filled with broccoli powers. I swapped out the sweet dressing for some Annie’s Goddess and drank a Lavender Kombucha.

I like swapping out the dressing for something more nutritious. Plus I get to check off “healthy carb swaps” on my healthy guidelines.

This salad is a mix of little raw broccoli florets and broccoli slaw. Then it has dried cranberries, sunflower seeds and some bacon bits to add.

Nutrients kind of make everything better in my world.

And Kombucha is the cherry on top.

I procrastinated going back to work by watching an episode of Top Chef: Masters on Bravo while eating lunch. Ohh sneaky sneaky Maren.

And after lunch I dove into some dark chocolate.

It’s impossible to not have a second helping when it comes to chocolate.

  • work til’ 3pm
  • gym 3:30-4:30pm
  • get to makin’ some dinner and drinkin’ some wine!!!!!!!!!!!!!!!
  • watch So You Think You Can Dance 8:00-10:00pm
  • hit the hay 10:00pm!

The easiest is the best sometimes. I am such a fan of roasting broccoli slaw. It is the best.

I don’t know what’s on the menu tonight for dinner, but last night I had some pork tenderloin…I rubbed it with salt, pepper and herbes de Provence then grilled and served it with a yummy peach/nectarine/blueberry chutney…it rocked!

Easy peasy dinner for me is some eggs with a side of sauteed/steamed/raw veggies and quiona/couscous/brown (from a box).

The salad looks delish :)
