Maren? Cookies for Breakfast? Really?

Good Hump Day morning friends. I’m in a great mood, despite no sun. I woke up this morning at about 9am and I was ready for a ‘coffee only’ breakfast due to my excessive pizza eating last night but my tummy was needing food at about 9:30 so I broke into the kitchen, put on the coffee and began concocting some yum-factor breakfast. I even have a recipe :mrgreen:.

Last night while I was reading my favorite blogs, check out my blogroll :-), I came across this recipe for a healthy, big, yummy, quick oatmeal raisin cookie! Who ever knew that cookie and those adjectives could go together?!

3 Minute Oatmeal Raisin Cookie

Ingredients

  • 1/4 cup oats
  • 1/8 cup egg whites (about 1 large egg white ;-))
  • 2 tsp brown sugar
  • 2 tsp flour
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1 TBSP raisins
  • a hefty shake of cinnamon

Directions

  1. Combine all ingredients in a microwave safe bowl.
  2. Scrape the batter off the sides of the bowl and flatten into a cookie shape. I like using the bowl because you get a perfectly round cookie.
  3. Cook in the microwave for 45 seconds, no longer or else it will be quite dry.
  4. Allow to cool for between 3-5 minutes and enjoy!

Nutrition Factor

This HUGE cookie has only 140 calories and 6g of protein! You cannot have a cookie this big that tastes this good anywhere!

I paired my cookie with some Watermelon and 2 cups of Archer Farms Vanilla coffee (additives: almond milk and sugar)! The H2O Melon is almost all gone :-(, I’m really sad. I think my mom has been hitting it pretty hard too, making it all disappear twice as fast.

My muscles really miss running and doing workout DVD’s. I’m ready to get back out there and pound the pavement. So on an ankle injury note…

I get the results of my MRI scan tomorrow morning and I’m nervous. Not because I know I’m going to need surgery or any crazy treatment to make it better, but because I have no idea what is going on. I spent a good chunk of time the other night on google trying to see what all the ankle injuries are and what their symptoms are and nothing really fits. I’m hoping for some tendonitis that needs to be booted for 3 weeks and POW back to normal. But I honestly don’t have any idea.

The good news is that the joint, which has been stiff and cant really bare any weight has gotten much looser in the last two days. But pain wise, it’s still doing the same things. I’ve had a lot of injuries and different types of symptoms, but this is like nothing I’ve ever experienced. We will see tomorrow.

That is awesome! I make a protein cake on my blog (same from Heather and April) with a few added ingredients…I bet they taste just as good!!
