Ohh My Gosh, Fried Chicken!

I just deep fried something in my dutch oven. That’s deep fried. Not pan fried or stir fried. Deep Fried!

Deep frying is kinda on a different level. There’s some precision involved.

350 is the magic number. 350 degrees for pure deep fried, crunchy yet moist in the middle yummy-ness.

I’m loving this recipe for a few reasons… 1) it uses 3 tablespoons of hot sauce. I’m a little obsessed with Tapatio, if you hadn’t realized. 2) I, like I’m sure everyone does, LOVES fried chicken.

There you go. Who doesn’t love fried chicken?!

Ohh My Gosh, Fried Chicken!

Takes 2.5 hours. Makes a ton of chicken wings. CJ is the fry-master!

Ingredients:

  • 2 packages of party wings
  • 3 tablespoons sugar
  • 3 tablespoons Kosher salt
  • 3 cups of buttermilk
  • 3 tablespoons hot sauce
  • 3 cups flour
  • 2 tablespoons paprika
  • 1 teaspoon fresh cracked black pepper
  • Canola oil for frying

Directions:

Begin by dry-brining the chicken wings. In a large bowl mix the sugar and salt and toss chicken wings in the mixture. Make sure everything is coated evenly then set aside for about an hour. Once the hour is up, wash under cold running water.

Prepare a wet mixture by combining buttermilk and hot sauce. Add the wings and stir everything together. You can marinate the wings in this mixture for about an hour (I did 45 minutes).

Prepare a dry mix of flour, paprika and pepper. Whisk so everything is thoroughly incorporated. Take the wings, one at a time and dredge in the flour mixture. Set on a plate ready to fry.

Fill a Dutch oven 2/3rd of the way up with canola oil and heat to 350-360 degrees.

Add the chicken to the oil but don’t over crowd the pot. Fry in batches and until the chicken wings are golden brown and cooked through, 7 minutes. Drain on a paper towel lined plate and season with salt.

CJ was very precise. When putting the party wings into the hot oil, make sure to place them in with an ‘away from you’ motion. This way you wont get splashed by the hot oil. I used this method and didn’t get burnt once!

Am I making this recipe again? YES!!

Just as a little side note… I updated my Recipe Page. I read through all the old recipes I’ve posted in the last 3 years and realized a bunch of them really weren’t recipe journal worthy. I cut a bunch out and made a list of only the recipes I’d make again (or have made again). Also with how much cooking I’m doing, my old recipe page was becoming a post archive. I hope you like the new one.

Pretty much everything you eat, I want. Not cool. I agree buffalo and blue cheese, yum… now I want BWW.

I have never made deep fried chicken before. I get scared of hot oil (my mom was hospitalized with severe burns and TSS from deep frying chicken, before we were born) and don’t have a dutch oven or thick ceramic cooking pot to use.

It’s good to know the proper way to deep fry :) That chicken does look yummy and crunchy (I need crunch for fried chicken).

I worked yesterday so my two days were pretty much visiting family and running errands.

Ooo. That’s awful. I was really scared of the hot oil at the beginning. It bubbles a ton when you put the chicken in but mine didn’t really splash… I’m going to be even more cautious now. SCARY!!
