Good Saturday Friends! Did you have a great Sweet Friday yesterday? I did. That pumpkin spice soy latte was ah-maz-ing. I can’t believe I’ve never had it with soy… or whipped cream :shock: after yesterday I can honestly say Whipped cream is the ONLY way to go!
Plus Friday was good because I finished the day with some pizza. I swear, I think Friday and Pizza go together like Santa and a Reindeer. They just fit.
For breakfast this morning I whipped out my pumpkin and got to work.
The Mama Pea Pumpkin Spice Latte!
Thanks to Mama Pea and her blog the health foodies have found a way to make pumpkin spice lattes :mrgreen:. And after reading the tweets, hearing the buzz around the net I just had to try it.
Okay here’s what you do. Brew coffee! Then for every 1 cup coffee add 1/2 cup milk, 2 tbsp pumpkin, 2 tsp sugar and spices (nutmeg, ginger and cinnamon). I just used pumpkin pie spice and LOVED it.
This is so yummy! My trick was to make a cup and keep adding coffee as I drank it, that way I felt like I had 3 cups of pumpkin spice rather than one ;-).
Then I made some Pumpkin Spice Pancakes! This recipe was from Jenna’s Bog Eat, Live Run.
Ingredients
- 1/2 + 2 TBSP whole wheat flour
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp ginger
- 1/2 cup milk
- 1 egg
- 1/2 tsp vanilla extract
- 1 TBSP melted butter
- 1/3 cup pumpkin
Directions
- heat up the griddle
- combine dry ingredients and whisk until combined
- combine wet ingredients and combine well, this includes pumpkin.
- Fold together wet and dry, do not over mix. Just until combined!
- Let rest 5-ish minutes then make.
I had 2 pancakes with honey, raw oats, a little buttah, dried cranberries and a shake cinnamon. Holy delicious.
Max is taking me to a deli called Wild Plum that he insists I MUST try because he almost cried both times he’s gone so far, because it’s so good. Hopefully it will not disappoint.
Ankle Stuff
The ankle is doing great! I am walking around the house with out the boot due to the doctors instructions. It’s pretty tough, my gait is really really bad but hopefully it will get better over the next couple days.
