It’s oh so embarrassing, I’m totally hungover today. Last night I enjoyed a snack of two oranges. Then a early dinner due to basketball practices covering the peak dinner hours. I had some leftover veggie pizza.
This was delicious and got me through my practices, unlike yesterday’s skimpy pre-practice snack. But when I arrived home, a little empty, I saw homemade steak enchiladas sitting on our stove top. Kiss all restraint aside, forget grabbing the camera to photograph. Just enjoy 2 plus a small second helping of the delicious Mexican fare! FACT!
I was so delectably full! Unfortunately I slept strangely. I woke up early due to dehydration and I feel all funky from so much food. I’m definitely get the Bad Blogger Award for not getting some pictures of those enchiladas, they were amazing. I can share the secret to them though…
Mix the meat in some taco seasoning before stuffing the enchiladas and topping them with enchilada sauce. It’s delicious.
In attempts to neutralize this morning I procrastinated breakfast for an hour or so. I read some blogs, replied to a few e-mails and set up my blog with the Facebook Networked Blogs app! Now all my posts are streaming through Facebook! How cool is that? You can click the link in my sidebar under Follow With Facebook to get my posts in your Facebook News Feed. Once I have more followers than just myself I might upgrade to the cooler widget that has pictures of the subscribers on it. I tried putting it on but it looks really sad with only my face on it. Breakfast
I set out to make Spiced Apple Oats. These are 100% delicious and 110% Fall. I make spice apples, then I make spice oats. Add the apples to the oats and add a dollop of peanut butter. Super easy, super delicious. Well I retrieved the peanut butter and saw this (and all us food bloggers/lovers know what ‘this’ means).
Oats in a Jar!
First make Microwave Spice Apples by chopping and coring a sweet apple, I used fuji. Top with pumpkin pie spice to taste, 1/2 tsp brown sugar and a few little smidges of butter. Microwave for ~2 minutes, stir then microwave for 30 more seconds.
Yummmmm!
Now make spice oats.
First, combine 1/3 cup almond milk (milk, soy your choice) with water to make a total of 1/2 cup. Put in a sauce pan and bring to a boil. Add milled flax seeds, 1/4 to 1/2 tsp, 1 tsp brown sugar, pumpkin pie spice to taste, and a dash salt. Add 1/4 cup rolled oats and cook on low for about 5 minutes.
Add apples to the oats, and either put them in a peanut butter jar or add a dollop peanut butter and enjoy! Oh- I promise you will enjoy ;-)

I had my oats with Dunkin Doughnuts Cinnamon Spice Coffee with milk and agave nectar. This coffee with these spicy oats tasted so good together. I take a bite of oats then wash them down with a swallow coffee.
I find it so comforting when my coffee is larger than my breakfast.
Today’s plan is pretty busy again. I have commuting time to account for, then class. I’m getting my Mid Term back today… nervous! Then I have to get back to Salinas to get to two practices. All before dinner! Wheew. You know, I really need to catch up on my reading for class. I’m being a very sidetracked student this Fall.
My ankle is so inflamed from all the running around between jobs and school. Plus the added 4 hours of standing a night for basketball tryouts isn’t helping. I tried heating it with a heating pad and it feels AH-MAZ-ING! The cold weather is making it really upset. I’m heating now in anticipation of my long afternoon and evening. Hopefully I see a huge difference during practice tonight.

I think the best oats I ever had were at a fancy hotel breakfast in Boston – they baked them and I had warm sliced bananas on top. SO good :)
You are the second person to say “Baked Oats” to me. What is that and how do I do it? They sound amazing!

Haven’t had oats in a long, long time!! Need to get on to it ASAP.. too many foodies posting oats recipes recently making me crave for some oats, lol.
Nommm, I love oats in a jar! Especially with apples, I’ve been eating my oats with cinnamony/brown sugary ones.
