Happy Sweet Friday Everyone!
How is your Friday treating you? Mines been so crazy eventful and it’s only 2:00 pm. I think we should first start with the most amazing Banana Bread recipe you will EVER have!
Maren’s Easy Peasy Banana Bread
This bread is so delicious the loaf is already almost half gone.
Ingredients
- 2/3 cup white sugar
- 1/3 cup shortening (earth balance)
- 2 cups whole wheat flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 medium mashed bananas
- 1 heaping tsp cinnamon
- you can add walnuts, peanut butter chips, chocolate chips, peanut butter (1/2 cup) and it’s amazing but this is just straight, no additives.
Directions
- Pre heat oven to 350 degrees.
- Cream together sugar and shortening well, it will no get creamy but definitely combine well.
- Whisk together all dry ingredients in a separate bowl. Mash bananas in a small bowl.
- Add dry ingredients to wet interchanging with mashed banana. Mix well. Pour into a loaf pan, don’t worry batter will be very sticky and un-runny.
- Sprinkle with rolled oats so it’s pretty and bake for 40-45 minutes.
Even if you aren’t vegan conscious this is a delicious bread. My brother shies away from anything dairy free and he even loves this loaf, hence why it’s almost gone ;-).
Ankle Doctor’s Appointment #3- The Cast is OFF!
I can’t even explain how ready I was for this appointment. The cast is coming off, not to be replaced by another but by a removable walking boot! REMOVABLE! Hello showers, Thank God!
I was good with the saw until she sawed a little too close to my incision. It made me jumpy and worried.
Get it off, Get it off! The doctors assistant immediately wanted me to get some x-rays so I got to walk down the hall to the x-ray room. I walked with nothing, it felt really weird at first because my joint wasn’t used to being so bendy but I was able to do it with no pain. So cool, I actually walked today!
The wall is my friend :-D.
The doctor did 3 different x-rays two laying on my back, one with my ankle just normal and my foot pointing up then another with my foot pointed in. Then one laying on my right side with the outside of my joint laying on the table. This one hurt but it was quick, so not too bad.
It felt so good for my leg to be out, I laughed in pure joy! There were lots of fuzzies still stuck to my leg, time for a bath.
This is my new foot, complete with walking boot. 3 weeks and I’m apparatus free. I also start PT as soon as possible which just happens to be in 2 weeks. The PT office is crazy booked right now. I’m a little sad to not start until the 14th but I guess it’s the right time. Everything works out how it is supposed to.
After we left the doctors we went by my grandmas house so I could let my ankle take a bath.

Oh best foot/leg bath EVER! Plus all the little bandages came off so I didn’t have to pick them off. So nice. And after about 30 minutes this is how my incision looks.
I think it looks pretty good for being all fresh. I hope you wont be able to see the stitch holes forever, but who’s being picky. It is a pretty amazing scar, don’t you think?

In celebration I enjoyed a Tall Soy Pumpkin Spice Latte WITH WHIPPED CREAM! Holy yum and wow.
Cinnamon whipped cream deliciousness only to be enjoyed in fall. Heaven!

Hahaha… okay, so the picture of you watching the saw worriedly made me giggle, cuz I know exactly what your worried voice sounds like… I’m so glad your cast is off! And your scar is totally awesome.
My most interesting scar is on my shin. When I was younger, supermarkets used to have the little bungie cord things that clipped across the checkout lane when a lane was closed. Once the bungie cord got snagged on our cart. So as we pushed the cart through, the stretchy bungie stretched tighter… and tighter… until it finally BROKE FREE and flew backwards and the metal clippy dude smacked me in the shin. Now I have a dent in my shin. Like, a literal dent. I have to be careful shaving my legs because the razor can catch in the hole.
No where near as amazing as yours! I have three scars on my chin. I liked to jump on the couch quite a bit when I was a little girl. The coffee table didn’t agree with that idea! You are so brave, and I’m so proud of you (in case you didn’t know!) I’m so bad about health procedures, and you handled the whole process with such grace. I need to have a Friday treat…I’m thinking a pumpkin muffin will suffice!

I made pumpkin bread yesterday, so I enjoyed several slices of that today :) I’m having a glass of wine right now and I also had a red velvet cake brownie tonight. Yum!
Oh gosh, what a relief to be cast free! Must have felt so good to wash your ankle, and the pumpkin spice latte was definitely well deserved. Bet it would have tasted great alongside a piece of that banana bread! :)
