I’m having so much fun on vacation!
I feel so out of the loop and am hoping to start fitting in some blog reading. I miss all my healthy living friends so much! You all inspire me every day and I miss feeling so empowered to eat my veggies.
Let’s get to today. First, after breakfast, we drove into Bend to eat lunch and do a serious grocery run.
We parked at this HUGE park with a lake and walked around while looking for a place to eat downtown.
I found this really cute, hippy-type lunch spot called Alpine Glow which had a great salad and sandwich menu.
While trying to decide what to order, I kept eyeing these GIGANTIC cinnamon rolls!
Gluten Free eating is really really hard! I’m finding that if I don’t have something quick and easy to make I just don’t eat. I’m figuring it out and finding some staples that are helping. So far I feel a little bit better. My tummy troubles seem to be working themselves out, though I still feel bad a lot. This afternoon I had a pretty bad stomach ache while grocery shopping. It’s a work in progress, I’m hoping to feel 100% better by about the 2 week point.
After surveying the menu I chose the cajun cobb salad, which was simple yet really really tasty.
It had mixed greens with seasoned chicken and ham, hard boiled egg, cucumber, tomato, blue cheese, kalamata olives and a vinaigrette dressing. I ate the entire thing! :mrgreen:
After lunch we walked back to the car to find the Trader Joe’s and basic market.
I didn’t take any pictures while grocery shopping because my stomach hurt and the place was packed with people. I get a little fussy in crowds.
I snacked on some gluten and sugar free dark chocolate after the Trader Joe’s run. It was super good! I had a hard time saving some for tomorrow.
Then when we got home I had a craving for chips and salsa so I dubbed it officially Fiesta Time!!
I decimated this bag! There where chips in it and now there are none! Booyeah!
After snack we all decided to go for a bike ride because it was starting to drizzle outside and the thunder was really picking up. Nothing like a ride in the rain.
I’m still super full from my massive fiesta snack so I don’t know if I’ll be partaking in dinner… I’ll be back tomorrow :-D
