Vanilla Blueberry Cinnamon Oatmeal

Hi guys!

Boy am I glad it’s a brand spankin’ new day. Don’t get me wrong. Yesterday’s fun and exciting shopping afternoon was everything a girl can dream of. But shopping is darn exhausting. I made it home in the late afternoon, curled up with my gingerade kombucha tea and practically took a nap. Now it’s back to the normal routine.

Breakfast

I whipped up some oats that were kind of inspired by this recipe.

I found the vanilla oatmeal recipe on a blog a long time ago and I made it once or twice while I was in college. It’s really really tasty. But the recipe makes 6 servings!! That’s a lot of oatmeal, people.

here’s what ya do:

combine in a sauce pan and simmer until all liquid is absorbed

  • 1 cup water
  • 1/2 cup old fashioned rolled oatmeal
  • 1 TBSP chia seeds
  • pinch salt
  • 1 stevia packet ( or 1 tsp sugar)
  • 3 drops vanilla extract

pour into a bowl and top with

  • 1 heaping handful blueberries
  • cinnamon
  • and 1/4 cup almond milk (I had unsweetened vanilla)

The original recipe is the one that got me up to speed about adding milk to already cooked oats. I’m not a huge oatmeal fan, but I like eating them because their so healthy and nutritious. Eating them this way is probably my favorite.  I guess it’s more like porridge. :mrgreen:

I also have a fuji apple, I’ll save it for later this morning. Oatmeal is fill-ing! And a mug of hot magic lemon water.

Weight Loss

I’ve lost a few pounds in the last 3 weeks. It’s more like 12 pounds. When I started eating clean my average weight was 175 pounds. I’m 5 foot 10 and my healthy weight range is from 130 lbs to 170 lbs. So, I was a little over what is considered healthy for my height.

Losing weight so quickly and without trying was sort of difficult for me to wrap my head around. I’m not trying to lose weight! I’m past that phase of my life and I’m happy with my body and myself. Losing a few pounds isn’t bad. I can tell I look better, I feel better, I can run farther. I’ll have to be honest and I feel a little more positive and up beat. It’s also a motivator to keep up all this healthy eating and fitness I’ve been doing. My main motivation though is still to keep my stomach and intestines happy and functioning correctly the added weight loss is just a perk.

  • 5/1/12: 175 pounds
  • 5/19/12: 168 pounds
  • 5/31/12: 162.5 pounds

That is great that your stomach is feeling better, I bet a lot of that is probably helping everything work out. I think once you start feeling better, eating better just falls in line. Way to go!

Okay, here’s my years of therapy and dealing with ED issues enter: unexpected weight loss can be a warning sign that you’re not eating enough. I know you are following IE but I’d recommend calculating your bmr and see how many calories you should be eating. Then track your calories to see if you are eating enough. If you eat the proper caloric intake and are still losing weight, I’d see your doctor because unexpected weight loss can be an indicator of a larger problem. We want you healthy and happy :)

Your so right! Thanks for the advice. I’ve started counting my calories (roughly) so I make sure I’m getting enough food. I am eating a little less but I’m still eating enough. No worries there. I think I spent so much time trying to lose weight and failing that now to be losing weight when I’m not really trying to is sort of weird to me… and confusing. You are amazing and I always love your comments. Thank you!!! :mrgreen:

Love the little fish bowl. Where did you get it from?? My wela used to call me little fish when we went to the pool. :) But I am always weddita.

I tend to eat Oatmeal VOO style with loads of fruits and a nut butter at times. I am too lazy to make oatmeal on the stovetop. haha. I do love Malt o Meal or Cream of Wheat or even Arroz con leche!! I suck at making it though so I leave it to the expert, my madre.

My E.D brain would be dancing in hapiness to weight loss. :\ But as long as you are getting the calories needed I think the weight loss is just a part of the healthy eating and your body finding it’s natural balance.

Best fruit . . . hmmm. . .I love berries so strawberries would be my favorite on fro-yo or ice cream. They go well with each other.

Favorite movie is too tough to call. How about yours?

I think I got the fish bowl at target or kohls but it was last year. Maybe you can find it online or something.

berries are the best in desserts.

yum, oatmeal!! I love oatmeal but only like eating it in the winter when its cold outside :) i like eating it with a big spoonful of PB mixed in…sooo yummy!

i wouldnt say that losing weight has made me freaked out…more that i’ve been freaked out by how seriously i’ve taken it in the past. As long as you are eating enough for your activities, then you should be fine…i’m happy in maintenance mode even though I know I could totally stand to lose a few pounds…right now i just like focusing on being healthy and happy :) congrats on your loss!

Thats great advice. I’m definitely not focusing too much on it so thats a good thing. Oatmeal in the winter tastes so much better than oatmeal in the summer.

I love eating fro yo or ice cream with black cherries! Yum!

You oatmeal looks really good. Both my husband and I like it, but we just never really eat it that often. Mostly if we have nothing else to eat for breakfast, we’ll make it!

Yeah I’m not a HUGE oatmeal fan either… it’s just healthy and it’s there when nothing else looks tasty. Thanks. I’m starting to feel a lot more positive about all the weight loss now.

congrats on the weight loss! earlier this year when i really tried to commit to eating clean (most of the time ;) ) i lost about 5 pounds pretty easily! it’s kinda amazing isn’t it! they do say is only 20% of what you do in the gym and 80% of what you eat! craziness!

Wow girl you lost all that in a month?! I need to eat what you are eating, thats fantastic and most importantly you FEEL better! What exactly is involved in eating clean? Like what do you avoid and what do you mainly eat? I want to try, it sounds healthy. And your oatmeal looks delish by the way!

PS. Your bowl that looks like a fish is adorable!
